At 128.2 proof, Found North presents its weightiest whisky to date. The primary component, making up 65% of this 5-whisky blend, is the same foundational whisky that Batch 002 was built around, only 20 months more mature. What it's gained in age has manifested in a deep resonance. We used two other corn components in this blend, capturing the demerara note from the 26 year old Hungarian oak aged whisky and a butterscotch texture from a lively 17 year old corn aged in ex-bourbon barrels.

The combination of these three corn components laid a thick, almost chewy, foundation for the pair of 18 year and 19 year old rye whiskies we blended in. One rye was aged in Hungarian oak, lending a white pepper and mesquite spiciness. The other, aged in rechar American oak, provided the counter melody of bright fruit notes, sweet melon, lychee tea and raspberry jam.

Flavor Notes

The nose pops out of the glass with rich maple syrup, caramelized red apple and worked leather. Batch 006 rolls across the palate like a river of molten lava made of treacle, honey and molasses. The finish lingers like a grizzly bear’s last pancake breakfast before hibernating through an arctic winter, presenting layer after layer of warm butterscotch syrup, sugared strawberries, figs, a hint of nutmeg and dark chocolate truffle power. Underneath the weight of all this whisky a few drops of water reveals cantaloupe, chestnuts, rose water, rich vanilla and the wonderful reminder that winter is not that bad if you have the right whisky.

Why We Made This Whisky

We made Batch 006 because we’ve discovered a profile with Batches 002 and 004 that is exciting and novel and we want to see how deep this rabbit hole goes. Every whisky drinker has the experience of cracking open the door of the whisky world and finding a massive hidden vault of flavor possibilities. The same is true for us.

Rye spice is a double-edged sword. The deeper you cut into the flavor opportunities, the spicier the palate. You can easily smooth the spice out with new oak or water it down through proofing. Batch 001 exemplifies the third option -- forget about making it “smooth” and instead make the whisky as robust and dynamic as possible.
‍
We started with herbaceous, 16 year old rye aged in Hungarian oak. We blended in fruit-forward, 17 year old rye aged in ex-Speyside scotch casks. The combination revealed a smoldering symphony of spice. Last, we lengthened the finish and increased the viscosity by adding double-distilled corn whisky aged for 20 years in refill and level-2-char virgin oak.
‍
The resulting whisky tests the outer limits of the spicy rye kick, presenting a simmering tannic profile. The first impression is hot cinnamon and cayenne. The second pass reveals all of the fruit-forward undertones. The third act exhibits all of the wood character -- vanilla, caramel and tannin. The finish is lengthy, very warming and surprisingly berry-forward and sweet.

Every release of Found North is a distinct batch of Canadian Whisky.

We blended this whisky to create big, complex flavors and bottled it at strength to preserve those flavors. We balanced the viscosity with spice and fruit from a combination of two different style ryes, both aged for 18 years. The first was aged in ex-Speyside scotch casks providing bright, fresh fruit. The second was aged in rechar American oak, which cut the viscosity in the mid palate with a distinct tingling cardamom and ginger quality. In search of texturous whisky to complement the rye in Batch 001, we discovered stunning double distilled corn whisky, affectionately known at Found North as “Sample 18.” We blended Sample 18 with a parcel of buttery, minty 17 year old rye aged in ex-wheated bourbon barrels and then added a touch of lively, earthy 16 year old rye.

The problem was -- the more we tweaked the ratio in favor of Sample 18 the more the blend improved.
