American whiskey evolved regionally in the early days. In the South, corn grew plentifully leading to the creation of bourbon. In the North, farmers grew rye leading to a distinct style known as Maryland Rye Whiskey and by the early 1900s there were over 50 distilleries operating in Maryland with an output that rivaled that of Kentucky.
